GOJI BERRY PHOTOS & PICTURES
Wolfberry, commercially called goji berry, is the common name for the fruit of two very closely related species: Lycium barbarum (Chinese: 寧夏枸杞; pinyin: Níngxià gǒuqǐ) and L. chinense (Chinese: 枸杞; pinyin: gǒuqǐ), It is also known as Chinese wolfberry, mede berry, barbary matrimony vine, bocksdorn, Duke of Argyll’s tea tree, Murali (in India), red medlar, or matrimony vine. Unrelated to the plant’s geographic origin, the names Tibetan goji and Himalayan goji are in common use in the health food market for products from this plant.
As a food, dried wolfberries are traditionally cooked before consumption. Dried wolfberries are often added to rice congee and almond jelly, as well as used in Chinese tonic soups, in combination with chicken or pork, vegetables, and other herbs such as wild yam, Astragalus membranaceus, Codonopsis pilosula, and licorice root. The berries are also boiled as an herbal tea, often along with chrysanthemum flowers and/or red jujubes, or with tea, particularly pu-erh tea, and packaged teas are also available.
Marketing literature for wolfberry products including several “goji juices” suggest that wolfberry polysaccharides have extensive biological effects and health benefits, although none of these claims have been supported by peer-reviewed research.
YACON ROOT PHOTOS & PICTURES
The Yacón is a perennial plant grown in the Andes of Perú for its crisp, sweet-tasting tubers. The texture and flavour have been described as a cross between a fresh apple and watermelon and is sometimes referred to as the apple of the earth. Another name for the yacón is Peruvian ground apple. The tuber is composed mostly of water and fructo-oligosaccharides.
These edible tubers contain inulin, an indigestible sugar, which means that although they have a sweet flavor, the tubers contain fewer calories than would be expected.
Yacón provides for two nutritional products: the yacón syrup and yacón tea. Both products are popular among diabetic people and dieters because the sugar these products contain is not absorbed by humans. This form of sugar, known as FOS (fructooligosaccharide), a special type of fructose, leaves the body undigested. The syrup is also a prebiotic which means that it feeds the friendly bacteria in the colon that boost the immune system and help digestion.
UGNI OR LITTLE MYRTLE PHOTOS & PICTURES
Ugni molinae (syn. Myrtus ugni, Eugenia ugni) is a shrub native to Chile and adjacent regions of southern Argentina. The fruit (“Ugniberry”) is cultivated to a small extent. The usage of the fruit in cuisine is limited to southern Chile where it grows. It is used to make the traditional liqueur Murtado that is made of aguardiente and sugar flavoured by conserving murtas inside the bottle. It is also used to make jam and the Murta con membrillo dessert and in Kuchens. The Ugniberry is known as “New Zealand cranberry” in New Zealand and marketed as the “Tazziberry” in Australia, but it is not a native plant to these countries.

Cocoa nibs are the dry-roasted pieces of the cocoa bean. They are usually sold in small packages at specialty stores and markets to be used in cooking, snacking and chocolate dishes. Since nibs are directly from the cocoa tree, they contain high amounts of theobromine.

Cacao nibs are ground, using various methods, into a thick creamy paste, known as chocolate liquor or cocoa paste. This “liquor” is then further processed into chocolate.
Chocolate and cocoa contain a high level of flavonoids, specifically epicatechin, which may have beneficial cardiovascular effects on health.
Prolonged intake of flavanol-rich cocoa has been linked to cardiovascular health benefits, though it should be noted that this refers to raw cocoa and to a lesser extent, dark chocolate, since flavonoids degrade during cooking and alkalizing processes. Studies have found short term benefits in LDL cholesterol levels from dark chocolate consumption. The addition of whole milk to milk chocolate reduces the overall cocoa content per ounce while increasing saturated fat levels, possibly negating some of cocoa’s heart-healthy potential benefits.
