Poultry is a category of domesticated birds kept by humans for the purpose of collecting their eggs, or killing for their meat and/or feathers. These most typically are members of the superorder Galloanserae (fowl), especially the order Galliformes (which includes chickens, quails and turkeys) and the family Anatidae (in order Anseriformes), commonly known as “waterfowl” (e.g. domestic ducks and domestic geese). Poultry also includes other birds which are killed for their meat, such as pigeons or doves or birds considered to be game, like pheasants. Poultry comes from the French/Norman word, poule, itself derived from the Latin word Pullus, which means small animal.

Turkey

The domesticated turkey is a large poultry bird. The modern domesticated turkey descends from the wild turkey (Meleagris gallopavo), one of the two species of turkey (genus Meleagris); in the past the ocellated turkey (Meleagris ocellata) was also domesticated.

The turkey is raised throughout temperate parts of the world and is a popular form of poultry, partially because industrialized farming has made it very cheap for the amount of meat it produces. The female domesticated turkey is referred to as a hen and the chick as a poult. In the United States, the male is referred to as a tom, while in Europe, the male is a stag. The average lifespan for a domesticated turkey is ten years.

The modern domesticated turkey is descended from one of six subspecies of wild turkey, Meleagris gallopavo gallopavo,[1] ancient Mesoamericans having domesticated this subspecies. The Aztecs domesticated the turkey (Mexican Spanish guajolote, from Nahuatl huexolotl) and used it as a major source of protein (meat and eggs), and also employed its feathers extensively for decorative purposes, as did many other Mesoamerican cultures. The turkey was associated with their trickster god Tezcatlipoca, perhaps because of its humorous behavior. There is also evidence that it is possible the Hopi Indians may have domesticated the turkey even before the Aztecs.

Turkeys were taken to Europe by the Spanish, who had found them as a favorite domesticated animal among the Aztecs and other Mesoamerican peoples. After being introduced to Europe, many distinct turkey breeds were developed (e.g. Spanish Black, Royal Palm).

Turkeys are traditionally eaten as the main course of Christmas feasts in much of the world (stuffed turkey) , as well as Thanksgiving in the United States and Canada, though this tradition has its origins in modern times, rather than colonial as is often supposed.

Duck

Duck refers to the meat of several species of bird in the Anatidae family, found in both fresh and salt water. Duck is eaten in many cuisines around the world. The most common duck meat consumed in the United States is the Pekin duck. Because most commercially raised Pekins come from Long Island, New York, Pekins are also sometimes called “Long Island” ducks, despite being of Chinese origin. Some specialty breeds have become more popular in recent years, notably the Muscovy duck, and the Moulard duck.

Duck meat is derived primarily from the breasts and legs of ducks. The meat of the legs is darker and somewhat fattier than the meat of the breasts, although the breast meat is darker than the breast meat of a chicken or a turkey. Being waterfowl, ducks have a layer of heat-insulating subcutaneous fat between the skin and the meat. De-boned duck breast can be grilled like steak, usually leaving the skin and fat on. Magret refers specifically to the breast of a mallard or Barbary duck that has been force fed to produce foie gras.

Internal organs such as heart and kidneys may also be eaten; the liver in particular is often used as a substitute for goose liver in foie gras.

Chicken

The chicken (Gallus gallus domesticus) is a domesticated fowl, a subspecies of the Red Jungle Fowl. As one of the most common and widespread domestic animals, and with a population of more than 24 billion in 2003, there are more chickens in the world than any other species of bird. Humans keep chickens primarily as a source of food, consuming both their meat and their eggs.

Recent evidence suggests that domestication of the chicken was already under way in Thailand, Vietnam and the South East Asian jungles over 10,000 years ago, and spread into neighboring regions to the east such as China, and towards the west in India where it was conventionally thought to have been domesticated From India the domesticated fowl made its way to the Persianized kingdom of Lydia in western Asia Minor, and domestic fowl were imported to Greece by the fifth century BC. Fowl had been known in Egypt since the 18th Dynasty, with the “bird that lays every day” having come to Egypt from the land between Syria and Shinar, Babylonia, according to the annals of Tutmose III.

The meat of the chicken, also called “chicken”, is a type of poultry meat. Because of its relatively low cost, chicken is one of the most used meats in the world. Nearly all parts of the bird can be used for food, and the meat can be cooked in many different ways. Popular chicken dishes include roasted chicken, fried chicken, chicken soup, Buffalo wings, tandoori chicken, butter chicken, and chicken rice. Chicken is also a staple of many fast food restaurants.
