In the United Kingdom, what is now regarded as the traditional meal consists of roast turkey, served with roast potatoes and parsnips and other vegetables, followed by Christmas pudding, a heavy steamed pudding made with dried fruit, suet, and very little flour. Other roast meats may be served, and in the nineteenth century the traditional roast was goose. The same carries over to Ireland with some variations.

Roast Turkey

Turkeys are traditionally eaten as the main course of Christmas feasts in much of the world (stuffed turkey) , as well as Thanksgiving in the United States and Canada, though this tradition has its origins in modern times, rather than colonial as is often supposed. Before the 20th century, pork ribs were the most common food on the holiday, as the animals were usually slaughtered in November. Turkeys were once so abundant in the wild that they were eaten throughout the year, the food considered commonplace, whereas pork ribs were rarely available outside of the Thanksgiving-New Year season. It has also displaced, to a certain extent, the traditional Christmas roast goose or beef of the United Kingdom and Europe. While eating turkey was once mainly restricted to special occasions such as these, turkey is now eaten year-round and forms a regular part of many diets.

When eaten at Christmas in the United Kingdom, turkey is traditionally served with winter vegetables including roast potatoes, Brussels sprouts and parsnips. Cranberry sauce is the traditional condiment in the northern rural areas of the United Kingdom where wild cranberries grow. In the south and in urban areas, where cranberries until recently were difficult to obtain, bread sauce was used in its place, but the availability of commercial cranberry sauce has seen a rise in its popularity in these areas too. Sometimes sausage meat, cocktail sausages or liver wrapped in bacon is also served

Especially during holiday seasons, stuffing, also known as dressing, is traditionally served with turkey. There are many varieties: oatmeal, chestnut, sage and onion (flavored bread), cornbread, and sausage are the most traditional. Stuffing may either be used to stuff the turkey (as the name implies), or may be cooked separately and served as a side dish.

Christmas Biscuits of Cookies

Modern Christmas Cookies can trace their history to recipes from Medieval Europe biscuits, which when many modern ingredients such as cinnamon, ginger, black pepper, almonds and dried fruit were introduced into the west. By the 16th century Christmas biscuits had become popular across Europe, with lebkuchen being favoured in Germany and papparkakor in Sweden, while in Norway krumkake were popular.[1]
The earliest examples of Christmas cookies in the United States were brought by the Dutch in the early 17th century. Due to a wide range of cheap imported products from Germany between 1871 and 1906 following a change to importation laws, cookie cutters became available in American markets. These imported cookies cutters often depicted highly stylised images with subjects designed to hang on Christmas trees. Due to the availability of these utensils, recipes began to appear in cookbooks designed to use them.[1]
In the United States, since the 1930s, children have left cookies and milk on a table for Santa Claus on Christmas Eve, though many people simply consume the cookies themselves. The biscuits are often cut into such shapes as those of candy canes, reindeer, and holly leaves.

Gingerbread has existed in some form since sugars and spices were brought back to Europe from soldiers in the Crusades. However it wasn’t until Queen Victoria and Prince Albert included it with a variety of other German Christmas traditions that the gingerbread cookies became primarily associated with Christmas.

Christmas Pudding

Christmas pudding is a dessert traditionally served on Christmas Day (December 25) in Britain. It has its origins in England and Ireland, and is sometimes known as plum pudding, though this can also refer to other kinds of boiled pudding involving dried fruit.

Christmas pudding is a steamed pudding, heavy with dried fruit and nuts, and usually made with suet. It is very dark in appearance – effectively black – as a result of the dark sugars and black treacle in most recipes, and its long cooking time. The mixture can be moistened with the juice of citrus fruits, brandy and other alcohol . In the nineteenth century, Christmas puddings were boiled in a pudding cloth, and they are still often represented as round.

Traditionally puddings were made on or immediately after the Sunday “next before Advent”, i.e. four to five weeks before Christmas. The Collect for that Sunday in the Book of Common Prayer of the Church of England, as it was used from the sixteenth century (and still is in traditional churches), reads:
“Stir up, we beseech thee, O Lord, the wills of thy faithful people; that they, plenteously bringing forth the fruit of good works, may by thee be plenteously rewarded; through Jesus Christ our Lord. Amen”
The day became known as “Stir-up Sunday”. Traditionally everyone in the household, or at least every child, gave the mixture a stir, and made a wish while doing so.

It was common practice to include small silver coins in the pudding mixture, which could be kept by the person whose serving included them. The usual choice was a silver threepence (pronounced “thruppence” in England) or a sixpence. The coin was believed to bring wealth in the coming year. Despite knowing that a portion might contain a coin , many a Christmas reveller damaged their teeth by biting into one, or indeed swallowed one by mistake. However this practice fell away once real silver coins were not available, as it was believed that alloy coins would taint the pudding. Additionally, coins pose a choking hazard.

Mince Pies

A mince pie (sometimes also minced, minced meat, or mincemeat pie) is a British festive sweet pastry, traditionally consumed during the Christmas and New Year period and also for Thanksgiving in America. Mince pies normally have a pastry top, but versions may also be found without the top in which case they are known as mince tarts. Mince pies are filled with mincemeat – a preserve typically containing apple, dried fruits such as raisins and sultanas, spices, and either suet or vegetable shortening. Modern mince pies typically do not contain any meat, but because suet is raw beef or mutton fat, mince pies made with suet are not suitable for vegetarians.
